B&B BREAKFAST

Standard Cooking Instructions:

  • Grill Setup: Place the open bun face-down on the left (hot) side of the grill for all sandwiches.

  • Egg Cooking: Cook the egg on the right side of the grill for consistency. For 2nd Shift: Cook one (1) egg (hard) in a ring on the right side of the grill.

Meat and Hash Browns: Place sausage and hash browns on the grill unless specified otherwise. For 2nd Shift: Cook one (1) hashbrown and one (1) sausage in the same fryer basket.

Breakfast General notes:

  • Menu items appear on a ticket in shorthand abbreviation in parentheses.

  • All breakfast combos and omelets come with toast or a biscuit.

  • Always serve with toast or biscuits, strawberry jelly unless requested otherwise.

  • All breakfast combos and omelets are served with silverware.

  • All eggs, besides sandwich eggs, are cooked to order.
    They can be scrambled, over hard, medium, easy, or sunny-side up.

  • Fried eggs needed for sandwiches are pre-cooked and located in the well next to the grill. Cook more as needed throughout the shift.

  • Hash browns are cooked in large batches during the morning as needed and put in 1 to 2 baskets.

  • All breakfast sandwiches come on a hamburger bun unless noted otherwise.

  • All breakfast sandwiches get American cheese besides BJ’s unless noted otherwise.

  • All breakfast sandwiches are wrapped in sandwich foil.

  • Breakfast sandwiches that are on toast are cut in half, “sissy cut”, unless BO/BJ is requested on toast.

  • BO or BJ are not to be cut in half, “sissy cut”, unless requested otherwise..

  • Gravy is typically not made past 10 a.m. during the weekdays and noon on weekends

  • If a customer orders a few eggs and a side, put them in the same box unless noted otherwise.

BREAKFAST SANDWICHES

  • BO (BO)

    Instructions:

    Place the open bun face-down on the left (hot) side of the grill.

    Place cooked egg on the right side of the grill

    NOTE: 2nd Shift cook (1) egg (hard) in a ring on the right side of the grill

    Place sausage and hashbrowns on the grill.

    NOTE: 2nd shift: Cook one (1) hashbrown and one (1) sausage in the same fryer basket.

    Stack hash browns on sausage.

    Place one (1) slice of American cheese on top stack.

    Place one (1) slice on egg.

    Assemble in order:

    Top bun

    American cheese

    Bottom bun.

  • BACON BO

    Instructions:

    Place the open bun face-down on the left (hot) side of the grill.

    Place cooked egg on the right side of the grill

    NOTE: 2nd Shift cook (1) egg (hard) in a ring on the right side of the grill

    Place sausage and hashbrowns on the grill.

    NOTE: 2nd shift: Cook one (1) hashbrown and one (1) sausage in the same fryer basket.

    Stack hash browns on sausage.

    Place one (1) slice of American cheese on top stack.

    Place one (1) slice on egg.

    Assemble in order:

    Top bun

  • BJ

    Instructions:

    Place the open bun face-down on the left (hot) side of the grill.

    Place cooked egg on the right side of the grill

    NOTE: 2nd Shift cook (1) egg (hard) in a ring on the right side of the grill

    Place sausage and hashbrowns on the left (hot) side of the grill.

    NOTE: 2nd shift: Cook one (1) hashbrown and one (1) sausage in the same fryer basket.

    Break two (2) pieces of bacon and stack them as a “#” on the left (hot) side of the grill.

    Stack hash browns on sausage

    Stack

    Place one (1) slice of pepperjack cheese on top stack.

    Place one (1) slice on the egg.

    Assemble in order:

    Top bun

    Bacon

    Pepperjack Cheese

    Hash brown

  • Bacon, Egg, and Cheese (BEC)

    Instructions:

    Place open bun face-down on the left (hot) side of the grill.

    Place cooked egg on the right (lowest temp) side of the grill.

    two (2) slices of bacon cut in half on the left (hot) side of the grill..

    Place one (1) slice of American cheese on the egg.

    Assemble as follows:

  • Bacon Sandwich (Bac Sand)

    Instructions:

    Place an open bun face-down on the left (hot) side of the grill..

    Place two (2) pieces of cooked bacon on the left (hot) side of the grill..

    Put bacon on bun.

    Assemble as follows:

    Bottom bun

  • Sausage, Egg, and Cheese (SEC)

    Instructions:

    Place open bun face-down on the left (hot) side of the grill.

    Place cooked egg on the right (lowest temp) side of the grill.

    Place cooked sausage on the left (hot) side of the grill.

    Place one (1) slice of American cheese on the sausage.

    Assemble as follows:

  • Sausage and Egg Sandwich (SE)

    Instructions:

  • Sausage Sandwich (Saus Sand)

    Instructions:

    Place an open bun face-down on the left (hot) side of the grill..

    Place cooked sausage on the left (hot) side of the grill..

    Put sausage on bun.

    Assemble as follows:

  • Ham, Egg, and Cheese (HEC)

    Instructions:

    Place open bun face-down on the left (hot) side of the grill.

    Place cooked egg on the right (lowest temp) side of the grill.

    Three (3) slices of ham on the middle of the grill.

    Cook the ham until visibly grilled.

    Place one (1) slice of American cheese on the ham.

    Assemble as follows:

    Top bun

    Cheese

    Egg

    Ham

    Bottom bun

  • Ham & Egg (HE)

    Instructions:

    Place open bun face-down on the left (hot) side of the grill.

    Place cooked egg on the right (lowest temp) side of the grill.

    Three (3) slices of ham on the middle of the grill.

    Cook the ham until visibly grilled.

    Assemble as follows:

  • Egg Sandwich (Egg Sand)

    Instructions:

    Place an open bun face-down on the left (hot) side of the grill..

    Place cooked egg on the right (lowest temp) side of the grill.

    Put egg on bun.

  • Egg and Cheese Sandwich (EC)

    Instructions:

    Place an open bun face-down on the left (hot) side of the grill..

    Place cooked egg on the right (lowest temp) side of the grill.

    Add one (1) slice of American cheese on the egg

    Put egg on bun.

    Assemble as follows:

    Top bun

    Cheese

    Egg

    Bottom bun

  • Burrito (Burr)

    Instructions:

    Mix in a metal bowl

    one egg

    pizza sausage (one (1) ounce scoop)

    diced green peppers (one (1) ounce scoop)

    diced onions (one (1) ounce scoop)

    Pour mixture onto the left (HOT) side of the grill.

    Flip halfway through cooking. (once the bottom is crispier)

    Add one (1) slice of American cheese on top.

    Place one (1) tortilla in a microwave for thirty (30) seconds

    Inside the tortilla put

    Cooked egg, pizza sausage, green peppers, and diced onions

    A dab of gravy.

    Wrap the tortilla and wrap in large foil.

    Tape the wrapped burrito to stay shut.

BREAKFAST COMBOS

  • #1 Breakfast Combo (#1 eggs, side, toast)

    Instructions:

    Cook eggs to order on the right (lowest temp) side of the grill.

    Cook choice of side on the left (HOT) side of the grill,

    Four (4) slices of bacon,

    OR one (1) sausage patty,

    OR Cook side on the middle of the grill, One (1) slice of thick ham.

    Cook toast on toaster setting #3

    White,

    OR wheat,

    OR cut and butter biscuit and place in sub oven.

    Place all in a 9x9 with

    One (1) hashbrown

    Two (2) strawberries jellies, and plasticware.

  • #2 Breakfast Combo (#2 eggs and toast)

    Instructions:

    Cook eggs to order on the right (lowest temp) side of the grill.

    Cook country fried steak in fryer until it floats and turns golden brown.

    Cook toast on toaster setting #3

    White,

    OR wheat,

    OR cut and butter biscuit and place in sub oven.

    Assemble as follows:

    Half (1/2) scoop gravy into half of a 9x9.

    Put the steak on the gravy

    Add a dab of gravy on top.

    Add eggs & toast on side without gravy.

    Two (2) strawberries jellies, and plasticware on a non-gravy side.

BREAKFAST OMELETTES

  • Ham and Cheese Omelette (H/C Oml. and toast)

    Instructions:

    Grease the grill with melted butter left (HOT) side of the grill.

    Thoroughly mix up contents in a metal bowl

    three (3) eggs

    cubed ham (one (1) ounce scoop)

    Pour mixture onto the left (HOT) side of the grill.

    Flip the omelet halfway through cooking. (once the bottom is crispier)

    Cook toast on toaster setting #3 after flipping the omelet

    White,

    OR wheat,

    OR cut and butter biscuit and place in sub oven.

    Add two (2) slices of American cheese on top of half of the omelet.

    Place in a 9x9 with toast/biscuit, two (2) strawberries jellies, and plasticware.

  • Western (Western and toast)

    Instructions:

    Mix in a metal bowl

    three (3) eggs

    cubed ham (one (1) ounce scoop)

    pizza sausage (one (1) ounce scoop)

    diced green peppers (one (1) ounce scoop)

    diced onions (one (1) ounce scoop)

    mushrooms (one (1) ounce scoop).

    Grease the grill with melted butter.

    Pour mixture onto the left (HOT) side of the grill.

    Flip the omelet halfway through cooking. (once the bottom is crispier)

    Cook toast on toaster setting #3 after flipping the omelet

    White,

    OR wheat,

    OR cut and butter biscuit and place in sub oven.

    Add two (2) slices of American cheese on top of half of the omelet.

    Place in a 9x9 with toast/biscuit, two (2) strawberries jellies, and plasticware.

BREAKFAST BISCUITS & GRAVY

  • Gravy

    Instructions:

    Plug in one pot of pre-browned sausage.

    Set to 350.

    Once simmering, add four (4) to five (5) heaping scoops of flour.

    NOTE: Heaping means heaping.

    Mix, make sure to scrape the bottom/sides of the pot.

    Once mixed, add one (1) gallon of whole milk to the pot

    NOTE: That just about the length of your thumb is left at the top of the pot.

    Let sit for five (5) minutes.

    NOTE: Make sure gravy is the correct consistency is similar to pancake batter

    TOO RUNNY - Use flour to thinken gravy.

    TOO THICK - Use milk to thin gravy.

    Stir every few minutes after the initial sit to help thicken the gravy and keep it from burning.

    NOTE: Needs to pour nicely not stick to ladle.

    Once thick, turn the pot down to warm.

  • 1/2 Order Biscuits & Gravy (1/2)

    Instructions:

    Microwave one (1) breakfast biscuit thirty (30) seconds.

    Use a plastic knife to split the biscuit in half.

    Cover with 1 and a half (1.5) scoops of gravy in a half-order box.

    Serve with plasticware on top of the box

  • Full Order (Full)

    Instructions:

    Microwave two (2) breakfast biscuits for forty-five (45) seconds.

    Use a plastic knife to split biscuits in half.

    Split in half and cover with two (2) scoops of gravy in an 8x8 box.

    Serve with plasticware on top of the box

SINGLE BREAKFAST ITEMS

  • Side of Bacon (SOB)

    Instructions:

    Place four (4) pieces of bacon on the left (HOT) side of the grill.

    Flip bacon half way through cooking.

    Cook until done.

    Wrap in foil.

  • Biscuit (Bisc)

    Instructions:

    Spray a foil.

    Cut a breakfast biscuit in half with a plastic knife

    Butter the biscuit

    Run through the sub oven.

  • Side of Sausage (SOS)

    Instructions:

    Place one (1) piece of sausage from the well on the grill left (HOT) side of the grill.

    Cook until done.

    Put in a clamshell

    Place plastic ware on top of box.

  • Side of Ham (SOH)

    Instructions:

    Place one (1) piece of thick ham on the grill left (HOT) side of the grill.

    Flip ham half way cooked (when the bottom is browned)

    Cook until done.

    Put in a clamshell

    Place plastic ware on top of the box.

  • Side of Toast (W/T or WW/T)

    Instructions:

    Cook two (2) toast in the toaster setting #3 (white or wheat).

    Butter with butter on the grill

    Cut in half diagonally.

    Put in a clamshell with two (2) strawberry jellies.
