PIZZAS & CALZONES

General Notes:

  • Pizza crusts can be found in the freezer adjacent to the pizza area. Additional crusts can be found in the walk-in.

  • Let the pizzas go through the oven entirely before taking them out.

  • Remove the paper and cardboard from all pizzas before putting them in the oven.

  • All thin-crust pizzas are to be baked on a pizza net/pizza pan.

  • Pizza cheese can be found inside the cooler.

  • Vegetables and sauces can be found in the fridge near the chicken and on the shelves by the office.
    Additional vegetables and sauce are in the barn.

  • All pizzas are to be boxed with a “little table” in the middle.

PIZZAS

  • 12 Inch Pizzas (12" TK/TN)

    Instructions:

    Take out the appropriate crust.

    TK = 12” Thick Crust

    TN = 12” Thin Crust

    Spread one (1) scoop of sauce evenly.

    Add one and one-half (1 and 1/2) hands-together scoops of cheese evenly.

    NOTE: You should see sauce through the cheese.

    Add appropriate toppings.

    Place in the pizza oven.

    Remove the pizza from the oven with a cardboard circle.

    Bring pizza to the prep table to cut the pizza into eight (8) slices.

    Put in a 12"' box with a table.

  • 16 Inch Pizzas (16" TK/TN)

    Instructions:

    Take out the appropriate crust.

    TK = 16” Thick Crust

    TN = 16” Thin Crust

    Spread two (2) scoops of sauce evenly.

    Add two (2) hands-together scoops of cheese evenly.

    NOTE: You should see sauce through the cheese.

    Add appropriate toppings.

    Place in the pizza oven.

    Remove the pizza from the oven with a cardboard circle.

    Bring pizza to the prep table to cut the pizza into twelve (12) slices.

    Put it in a 16" box with a table.

  • Veggie Pizza Toppings:

  • Meat Lovers Pizza Toppings:

    Cheese

    Bacon

    Diced ham

    Pepperoni

    Sausage

  • BLT Pizza (12/16" BLT)

    Instructions:

    Take out the appropriate crust.

    TN = 12” or 16” Thin Crust (unless requested think crust)

    Add toppings

    Cover in correct cheese amount for crust size.

    Add bacon.

    Place in the pizza oven.

    Remove the pizza from the oven with a cardboard circle.

    Bring pizza to the prep table to cut the pizza.

    Add mayo first, then lettuce, then diced tomatoes.

    Cut pizza into squares. Three cuts horizontally and vertically.

    Put pizza in 12” or 16” pizza box.

    Drizzle mayo from squeeze bottle, sprinkle tomatoes, and lettuce.

    Put a table in the middle and close the box.

CALZONES, BREAKSTICKS & PRETZELS

  • Calzone (Calz)

    Instructions:

    Take out a calzone crust.

    Spray a foil and the calzone crust on the foil shiny side down.

    Run through the bottom oven on calzone setting.

    Seperate the foil and crust.

    Lay the crust back on the foil sticky side up.

    Add one (1) handful of cheese on half of the crust.

    Add appropriate toppings.

    Fold top over and pinch the two sides together.

    Cut three (3) vents into the top: left, right, and center.

    Place in the pizza oven.

    Remove calzone from pizza oven.

    Bring calzone to the prep table to cut.

    Add butter and shake.

    Cut on the vents to make four pieces.

    Put in a 9x9 with sauce choice.

  • Breadsticks (B-Stix or B-Sticks)

    Instructions:

    Take three (3) breadsticks out of pizza freezer

    Put on spray foil.

    Butter each breadstick.

    Put in the sub oven.

    Rebutter them and add shake.

    Place in box with sauce requested on ticket.

  • Pretzels (Pretz)

    Instructions:

    Take four (4) pretzels and put them in the microwave for :45 seconds.

    Put on spray foil.

    Butter and salt each prezel.

    Put in the bottom oven on pretzel time.

    NOTE: Double check correct button pushed for pretzels.

    Serve with a cup of nacho cheese (not squeeze).

BREAKFAST BISCUITS & GRAVY

  • Gravy

    Instructions:

    Plug in one pot of pre-browned sausage.

    Set to 350.

    Once simmering, add four (4) to five (5) heaping scoops of flour.

    NOTE: Heaping means heaping.

    Mix, make sure to scrape the bottom/sides of the pot.

    Once mixed, add one (1) gallon of whole milk to the pot

    NOTE: That just about the length of your thumb is left at the top of the pot.

    Let sit for five (5) minutes.

    NOTE: Make sure gravy is the correct consistency is similar to pancake batter

    TOO RUNNY - Use flour to thinken gravy.

    TOO THICK - Use milk to thin gravy.

    Stir every few minutes after the initial sit to help thicken the gravy and keep it from burning.

    NOTE: Needs to pour nicely not stick to ladle.

    Once thick, turn the pot down to warm.

  • 1/2 Order Biscuits & Gravy (1/2)

    Instructions:

    Microwave one (1) breakfast biscuit thirty (30) seconds.

    Use a plastic knife to split the biscuit in half.

    Cover with 1 and a half (1.5) scoops of gravy in a half-order box.

    Serve with plasticware on top of the box

  • Full Order (Full)

    Instructions:

    Microwave two (2) breakfast biscuits for forty-five (45) seconds.

    Use a plastic knife to split biscuits in half.

    Split in half and cover with two (2) scoops of gravy in an 8x8 box.

    Serve with plasticware on top of the box

SINGLE BREAKFAST ITEMS

  • Side of Bacon (SOB)

    Instructions:

    Place four (4) pieces of bacon on the left (HOT) side of the grill.

    Flip bacon half way through cooking.

    Cook until done.

    Wrap in foil.

  • Biscuit (Bisc)

    Instructions:

    Spray a foil.

    Cut a breakfast biscuit in half with a plastic knife

    Butter the biscuit

    Run through the sub oven.

  • Side of Sausage (SOS)

    Instructions:

    Place one (1) piece of sausage from the well on the grill left (HOT) side of the grill.

    Cook until done.

    Put in a clamshell

    Place plastic ware on top of box.

  • Side of Ham (SOH)

    Instructions:

    Place one (1) piece of thick ham on the grill left (HOT) side of the grill.

    Flip ham half way cooked (when the bottom is browned)

    Cook until done.

    Put in a clamshell

    Place plastic ware on top of the box.

  • Side of Toast (W/T or WW/T)

    Instructions:

    Cook two (2) toast in the toaster setting #3 (white or wheat).

    Butter with butter on the grill

    Cut in half diagonally.

    Put in a clamshell with two (2) strawberry jellies.
