Grilled Cheese (GC)
Instructions:
Butter two (2) pieces of white bread.
Place butter-side down on the left (HOT) side of the grill.
Put one (1) slice of American cheese on each open side.
Cook until crisp.
Stack the top piece of bread cheese side down on the bottom piece.
Bring the sandwich to the deli counter.
Cut in half.
Wrap in foil.

Grilled Ham and Cheese (GHC)
Instructions:
Butter two (2) pieces of white bread.
Place butter-side down on the left (HOT) side of the grill.
Put one (1) slice of American cheese on each open side.
Put four (4) slices of thin ham in the middle of the grill and cook until crispy.
Put the four (4) slices of cooked thin ham on the bottom piece of bread.
Stack the top piece of bread cheese side down on the bottom piece.
Bring the sandwich to the deli counter.
Cut in half.
Wrap in foil.

Turkey Club (T/C)
Instructions:
Butter three (3) pieces of white bread.
Place butter-side down on the left (HOT) side of the grill.
Cook three (3) slices of turkey on the left (HOT) side of the grill.
Cook one (1) piece of bacon split in half on the left (HOT) side of the grill.
Build on the grill, place the middle section on the bottom section and flip the top layer on the middle section.
BOTTOM LAYER
Put mayo on the open side
Add Swiss cheese to the top and bottom open-side breads.
Add lettuce and two (2) slices of tomato to the bottom.
Put two (2) slices of turkey on the bottom of the bread.
MIDDLE LAYER
Put mayo on open side
Add American to the middle.
Put bacon on the middle layer of the bread.
Put two (2) slices of turkey on the bottom of the bread
TOP LAYER
Put mayo on open side
Put one (1) slices of turkey on the middle.
Put the top bread face-down on the stack.
Cut in half
Wrap in foil
Put in an 8x8 box, unless ordered with a side.

Reuben (Reuben)
instructions:
Microwave Reuben meat (red in color) for :45 seconds.
Place Reuben meat on the left (HOT) side of the grill.
Add sauerkraut right (COOLEST) side of the grill.
Butter two (2) slices of rye bread.
Place butter-side down on the left (HOT) side of the grill.
Add one (1) slice of swiss to each bread.
Add 1,000 island dressing to the bottom bread.
Flip Reuben meat halfway through
Add sauerkraut to 1,000 island bread.
Assemble as follows:
Bottom bread
Swiss, meat
Sauerkraut
1,000 island
Swiss
Top bread.
Cut in half
Wrap in foil
Place in the appropriate box with four (4)/five (5) pickles on the side.

Philly Beef and Swiss (Philly)
Instructions:
Microwave Philly meat (brown in color) for :45 seconds.
Place Philly meat on the left (HOT) side of the grill.
Run a sub bun in the sub oven face-down on sprayed foil.
In the middle of the grill
Butter, salt and pepper the veggies - sliced onions and diced green peppers.
Use spatula to cut up veggies.
Flip the meat. Shred the meat.
Combine the veggies and meat.
Place one (1) piece of swiss cut in half on top mixture.
Place one (1) piece of swiss cut in half on bottom bun.
Assemble as follows:
Bottom bun
Swiss
Meat and veggies
Swiss
Top bun.
Cut in half and place in the appropriate box.

Fishtail Sub (F/T)
Instructions:
Place fishtail in big fryer.
Run a sub bun in the sub oven face-down on sprayed foil.
Remove fish from fryer when it floats and bring to grill.
Dress bottom bun to order.
Assemble as follows:
Bottom bun
Dressing
Fish
Top bun
Cut in half and place in appropriate box.

Thick Fried Bologna (TFB)
Instructions:
Place thick sliced bologna in fryer.
Place double bun open-side down on the right (COOLEST) side of the grill.
Flip bologna when darkened
Dress bottom bun to order.
Assemble as follows:
Bottom bun
Dressing
Bologna
Top bun
Place in appropriate box.

Pork Fritter or Pork Tenderloin (P/F P/T)
Instructions:
Place pork into fryer.
Cook for four to five (4-5) minutes.
Place double bun open-side down on the left (HOT) side of the grill.
Flip pork halfway through, should be crispy and golden brown, not floppy or rubbery.
Dress bottom bun to order.
Assemble as follows:
Bottom bun
Dressing
Pork
Top bun
Place in appropriate box.

Country Fried Steak (CFS)
Instructions:
Place country fried steak patty into fryer.
Cook for four to five (4-5) minutes, flip till brown in color.
Place big bun open-side down on the middle of the grill.
Flip country fried steak patty halfway through, finish should be crispy, not floppy or rubbery.
Dress bottom bun to order.
Assemble as follows:

Dressing
country fried steak patty
Top bun
Place in appropriate box.
CHICKEN SANDWICHES

Chicken Sandwich (CHX Sand)
Instructions:
Place chicken patty into fryer.
Cook for four to five (4-5) minutes.
Place double bun open-side down on the right (COOLER) side of the grill.
Flip chicken halfway through.
“POKE” chicken to make sure it is fully cooked, NO pink on inside.
Should be crispy, not floppy or rubbery.
Dress bottom bun to order.
Assemble as follows:
Bottom bun
Dressing
Chicken Patty
Top bun
Place in appropriate box.

Buffalo Chicken Sandwich (Buff CHX)
Instructions:
Place chicken patty into fryer.
Cook for four to five (4-5) minutes.
Place double bun open-side down on the right (COOLER) side of the grill.
Flip chicken halfway through.
“POKE” chicken to make sure it is fully cooked, NO pink on inside.
Should be crispy, not floppy or rubbery.
NOTE: When using buffalo sauce it should cover the bottom bun, not overflowing and drizzle on top of the chicken.
Dress bottom bun with lettuce and cover bun with buffalo sauce.

Place in appropriate box with a packet of blue cheese.

Southwest Ranch Chicken Sandwich (SWR CHX)
Instructions:
Place chicken patty into fryer.
Cook for four to five (4-5) minutes.
Place double bun open-side down on the right (COOLER) side of the grill.
Flip chicken halfway through.
“POKE” chicken to make sure it is fully cooked, NO pink on inside.
Should be crispy, not floppy or rubbery.
Dress bottom bun with southwest ranch and lettuce.
Assemble as follows:
Bottom bun
Southwest ranch
Lettuce
Chicken Patty
Pepperjack cheese
Top bun.
Place in appropriate box.

Grilled Chicken Sandwich (Grill CHX)
Instructions:
Microwave grilled chicken for one (1) minute.
Place chicken on the left (HOT) side of the grill with weight on top.
Place small bun on right (COOLER) side of the grill open-face down.
Flip chicken when light brown in color.
Slightly cut chicken to make sure it is fully cooked (NO PINK)
Dress bottom bun to order.
Assemble as follows:

BLT SANDWICHES

BLT Sandwich (BLT)
Instructions:
Cook toast in toaster setting #3 (white or wheat).
Break three (3) piece of bacon and stack as a “#” on the left (hot) side of the grill.
Put on mayo on both pieces of toast.
Dress bottom bread with lettuce, and tomato.
Assemble as follows:
Bottom bread
Mayo
Lettuce
Tomato
Bacon
Top bread.
Cut in half.
Wrap in foil.
Place in appropriate box if needed.

BLT Sub (BLT Sub)
Instructions:
Place sub bun on sprayd foil and run through sub oven.
Put five (5) piece of bacon on the left (hot) side of the grill.
Put on mayo on bottom side of sub.
Dress bottom bread with lettuce, and tomato.
Assemble as follows:
Bottom sub bun
Mayo
Lettuce
Tomato
Bacon
Top sub bun.
Cut in half.
Wrap in foil.
Place in appropriate box if needed.

BELT Sandwich (BELT)
Instructions:
Cook white toast in toaster setting #3 (comes on white unless requested otherwise).
Break three (3) piece of bacon and stack as a “#” on the left (hot) side of the grill.
1st SHIFT - Warm egg from the egg well on the right (COOLER) side of the grill.
2nd SHIFT - Cook hard ring in buttered ring on the right (COOLER) side of the grill.
Put on mayo on both pieces of toast.
Dress bottom bread with lettuce, and tomato.
Assemble as follows:
Bottom bread
Mayo
Lettuce
Tomato
Egg
Bacon
Top bread.
Cut in half.
Wrap in foil and place in appropriate.

Instructions:
Toast sub bun with two (2) slices of provolone on each side.
Put lettuce and tomato on bottom bun.
